We needed a speedy lunch for our Lake District adventure last week. So we grabbed 3 chicken breasts, a bowl and a collection of herbs, spices and oils. Then added a dash of tequila and vodka, and left overnight to soak everything up. Shlurp.
Friday morning we griddled the breasts turning regularly to minimise any catching.
Tall Hungry One managed to save two avocados from Birthday brunch. We sliced them both along with the grilled chicken and popped everything into lunchboxes for the day.
The plan was to perch on a boulder somewhere between a fell and a lake surrounded by sheep. However, thanks to a birthday induced hangover we left a little too late so had to make do with an in -car on the move picnic.
Clearly this is after we’d demolished a good 3/4, far too peckish by this point to take photos first.
Delicious when piled together. Would have been ever better in the rolls we had planned to use…
